A raw Latxa sheep milk cheese from the heart of the Basque County; it is slightly dry and grainy in texture, with a very lightly smoked exterior which results in a delicate but meaty aftertaste. We think this is a perfect example of what northern Spain has to offer.


Ingredients: Raw Latxa sheep's milk, salt, rennet, lysozyme (derived from egg), lactic ferments.
